    Either I'm being really slow here or for some reason it's not possible to do this in VE Pro ....

    Also, where is the Search functionality of this forum - my question must be a FAQ.

     AFAIK you need to create audio inputs. Assign the outputs of Kontakt to the audio inputs and then route the audio inputs to the outputs of VE pro.

    Exactly. Create an Input channel in VE Pro and select the Kontakt output as input source for that channel.
