Is it possible to copy the panning from one channel to another in Ensemble?

Actually this is possible.

If you're referring to the Balance slider on a channel, simply right-click the source channel and select Copy -> Balance, and then right-click the destination channel and select Paste Balance.

If you're referring to the Stereo Pan plugin there are a couple of ways. One is to Alt-drag the 'Stereo Pan' strip to another channel and then removing the old plugin. Another is to right-click the source channel and select Copy -> Post Effects, and then right-click the destination channel and select Paste Post Effects. Similar methods of working can be applied to any effect plugin or set of plugins on a channel (see Copy -> Effects as well).

Note that in the case of the right-click and Paste option, it is possible to hold Alt while doing this and things will be copied to all selected channels.
