I purchased the Orchestral Strings I-Standard Library. This library apparently contains only monophonic samples. Is there any way to create polyphony other than assigning each note in a chord to a different channel? I've looked at several video tutorials on the subject, but they have not been helpful. For example, I understand what they're doing in the chord matrix but I don't want to play an entire chord with just one note. I want to use multiple notes in a channel to create a chord.

If you have VI Pro, you should be able to switch between monophonic and polyphonic samples in the Options tab.
In fact, I think it defaults to polyphonic samples.
If you don't have VI Pro I don't think there's any way to create polyphonic samples.
If you don't have VI Pro... Oh, well looky there 25% off this month.

Orchestral Strings of course isn't a monophonic library. Only the legato patches are monophonic.
VI Pro also isn't needed for polyphony. It offers polyphonic legato which isn't possible with the free VI player.

I installed the demo version of VI Pro, but I still cannot see an option to switch between mono and poly. When I play a chord, I still only hear one note.

I've seen the video but the problem is that the instance of VSL that I insert into Cubase doesn't look like that. Instead it looks like the attached screenshot.

The screenshots shows an instance of the free Vienna Instruments player, not Vienna Instruments Pro.

I see the difference now. I was using Vienna Pro 6, whatever that is. Now that I have installed the demo for Vienna Pro 2, it works. Unfortunately, to my ears VSL doesn't sound any better than the EWSO library that I currently have, so investing in Vienna Pro is not worth my money.

Vi Pro 2 has nothing to do with the "sound" of the library. Vi Pro 2 is simply a sample playing software application which allows you to manipulate the samples that originate from the library (Attack, Release, Tuning, etc.) The difference between Pro 2 and the free player is the you have exponentially more ways to manipulate the samples in order to create a more realistic natural performance (along with some added goodies like the sequencer etc.) If you have the time, go back to the link I provided and watch all of the videos to get an idea of what VI Pro 2 was designed to do.
If you want to enhance the "sound" of the library (sweeten, fatten, Reverb etc.) you should look at the Vienna Suite with all of its plug-ins or MIR. I believe you can download a free demo license of Vienna Suite so give it a try. Incidentally, I've used Vienna Suite to correct some of the massive flaws built into EWSO but that's for another thread😮
I realize that this is all just a matter of taste danika but seriously if you wanted to make a fair comparison between EWSO and VSL you didn't have to go any further than listening to the demos and deciding how one library or the other fits into your creative goals. And I don't want to get into a EWSO verses VSL debate but EWSO is fine if all you do are run of the mill big Hollywood styled film scores. VSL can easily handle that too but "to my ears" EWSO CAN'T handle anything more than that.

Right, understand that the 2 primary differences between pro and standard is, polyphonic legato and humanizing your voices.
If you want polyphonic legato, try using the sustain patches instead. They arent the same thing I know (more on this in a second), but they will get you vaguely close.
While I think its crappy to lock polyphonic legato behind a paywall (you already purchased a library with legato that supports polyphonic, but in order to incentivize people to purchase VI Pro, they had to sweeten the deal, which is sad), the humanize option is really sweet. Is it critical? I dont think so, and that is why they had to lock legato behind a paywall, because polyphonic legato IS critical. And before anyone suggests using sustain patches in liu of legato, they arent the same patches. Legato is much more suitable for smaller music projects (I tend to write alot of 10-15 piece orchestral music that might have 2 cellos, 3 violins, 3 violas, and perhaps a few solo woodwind instruments).
The humanize feature set is exceptionally nice IF you are planning on using VSL as the main sound you will produce for your production, that is, writing and playing your piece and creating a wav of the VSL library playing because it will make your sound more natural and human lke, in other words, when done well, will sound so much like the real thing that it will take a trained ear to hear the difference.
The videos are done very well, you should watch them and go through the feature set.
