I am trying to use VE Pro with Logic Pro X but am unable to install the AU Plug-ins.
The VE Pro Installation package clearly states that AU Plug-ins can be installed but they do not appear in the custom install options.

Hello,
The AU version of the plug-in is always automatically installed on OS X, and other plug-in formats refer to it.
Find the plug-in under /Library/Audio/Plug-Ins/Components on your system drive.
If you can´t see the plug-in in Logic for some reason, please check in Logic´s Plug-in Manager.

Ah ha! Yes, the component...
I removed the VE Pro components because I usually use Digital Performer and the (excellent) MAS plug-in seems to work fine without components. I de-clutter plug-ins regularly, but the VE Pro ones seem to have gotten lost. 
So, a quick visit to a backup from last year and I'm in business. Now I can just build a Logic template around my existing VE Pro instances. So much easier!
